I have an aged Zojirushi bread machine that has cranked out many hundreds of loaves over the years. In winter I like to
bake a few loaves of raisin bread, which was a treat when I was a kid living in Australia.
Dry:
3 cups flour
1 tsp salt
2 tbsp dried milk powder
3 tbsp sugar
1 tsp dried yeast
1 cup of raisins
1 tsp nutmeg
1 tsp cinnamon
Wet:
1 cup + 2 tbsp water
2 tbsp vegetable oil
1 egg
Technique:
Add all dry ingredients except the yeast and raisins to a bowl.
Add all the wet ingredients to the bread machine pan.
Sprinkle/float the dry ingredients on top of the wet ingredients in the pan.
Poke a small indent in the top of the dry ingredients and add the yeast.
Put the pan in the bread machine, close the lid, and dial up a regular loaf.
My Zojirushi beeps after about 15 minutes, this is the signal to open the lid and sprinkle in the raisins (make sure
they're not stuck together).
Close the lid and wait for the magic to happen.
If your breadmaker doesn't have the 15 minute signal to add ingredients then just add the raisins to the dry mix. They will
be a bit chopped up by the bread maker paddles, but the bread should still taste fine.
